Won't wet hay mold/heat/catch fire?

Unwrapped, yes. The wrapping process excludes oxygen which changes the molding process to fermentation. Nothing burns without oxygen.

Do I need a special baler?

No. Modern balers handle high moisture forage very well. There are special balers that chop the hay as it's baled and make a very nice product, but these aren't necessary to start baling.

Do I need special equipment to handle all of the baleage?

No. Baleage can be handled bu all of your current equipment, bale beds, forks, tractors and choppers. The wrapped bales are heavier so they should be made smaller than unwrapped bales.

Does it freeze?

Freezing is not an issue for baleage made at appropriate moisture. It can be a temporary inconvenience on the coldest days if extremely wet hay is wrapped. Baleage is utilized in the coldest climates all over the world.

Can you wrap square bales?

Yes. Square bales as well as round bales can be wrapped.

What about high nitrate forage?

Nitrate is broken down by the fermentation process making haylage an excellent option for potentially dangerous crops.
